Made this for dinner Tuesday night. It was really good, but you have to decide how much Jalapeno you want depending on your tolerance for hot. I put in a small can of diced Jalapenos and it was a little over the top for us. Ate it anyway because the flavors were really wonderful. Next time I'll only use 1/2 of the can.

Tamale Pie

2 boxes Jiffy corn muffin mix
1 onion chopped
2 cups shredded cheddar cheese
1 can creamed corn
1 1/2 cups sour cream
4 eggs
2 cans diced chilies
1/3 cup vegetable oil
1 can or less of diced Jalapeno

Mix dry corn bread mix and diced onion. Mix in the rest of the ingredients and pour into a greased 9 X 11 baking dish.

Bake at 350 degrees for 50 minutes

I added ground beef to mine. Fried ground beef until done and put on the bottom of the pan, poured corn bread mixture over that and then baked. I might try adding a dry taco mix to the ground beef next time and eliminate the Jalapeno or cut the Jalapeno down further.

I got this recipe from my sister, and she said she's even added cream cheese (along with the cheddar) and it was even better.

Very intense and delicious, and the flavors of all of the ingredients came through nicely.......even the cheese.
