You have it backwards. Government control over the economy works in theory, but not so well in practice. In an ivory tower some politician may think he can understand and control everything and get beneficial results, but in the real world of real people living real lives it often works out badly.

Why shouldn't the government, for the public good, subsidize the creation of more green leafy acreage and corner grocers?

Price subsidies subsidizes the creation, indirectly by making the price higher, which discourages the consumption, and means that people have to pay more directly for the good, and then also pay more in taxes, all of which to give a hand out to some corporate agribusiness.
