Wheat, on the face of it, is a high glycemic food.

Actually, whole wheat has a glycemic load marginally less than barley and soba, two grains that I believe he considers acceptable. The glycemic load of whole wheat is twice that of oat bran, but appears to be no worse than other acceptable grains. Wheat germ is equivalent in glycemic load to oat bran. So I don't think "high glycemic" adequately explains the prohibition on wheat.

My impression is that he picks on wheat because it's ubiquitous, not because it's worse than other grains. I could be wrong, but I don't recall any other explanation from him.
