Take it from me, such a project is a lot more complex than it appears. There are very few right angles, for one thing. It's hard to clamp, and hard to get to fit. I made a few mistakes that I would make slight design changes to avoid if I were to build another, but I don't intend to.

I used scrap wood in Father In Law's shop to build mine. After I cut the pieces I realized I had a few pieces of white oak in with the red oak, and they take stain differently.

White oak has closed tyloses and is suitable for tight cooperage--whiskey barrels. Red oak tyloses are open so you can make slack cooperage, nail and flour kegs, but not whiskey kegs. That's the reason they take stain so differently. Also, white oak is paler than red oak. Both are beautiful woods.
