Interesting compilation at the linked blog. The biggest changes are substitution of carbohydrates for fat (carbs up, fat down), and overall increase in caloric intake.

Could it be that carbohydrates don't satisfy hunger enough for people to stop, or is it addictive nature of carbohydrates?

Substitution of low fat instead of whole milk also parallels the increase in obesity. It is only one of the components, but still, it is substitution of carbs for fat that;s going on...
