Omniscience is describable, the description is not even disputable. If God is Omniscient, the Omniscience of God is describable and there is no reason for dispute, except if you have someone below normal intelligence who doesn't get it and insists upon being difficult. If you want to add some other characteristics (made of stone, wings, long beard, breaths, sleeps, weeps, etc) people can argue till the cows come home, but Omniscience is a simple term and not subject to differences of view.
