You can still measure levels of things in samples that have been lying around for years if they've been frozen properly.

Frozen unprocessed foods often have HIGHER nutritional value than fresh. Freezing doesn't damage nutritional value in the way canning does. Now, if you're buying a prefab pizza, that's a different story...
