They are counting these factors backwards.

Depends on your point of view. Some people will stand on their heads to get a viewpoint of statistics that fits within their outlook. Your interpretations are in the very small minority.

Maybe we have higher cholesterol and heart disease rates because our medical system doesn't emphasize prevention. Or maybe our system of only emergency care only for the poor has something to do with it?

After all how much profit is in... prevention? And PROFIT is what it is all about in our system.

Yoga class/vegetarianism vs triple heart bypass/stents/cholesterol lowering drugs? No contest where the money is.

I know plenty of people who would rather have their steak and deal with the symptoms via cholesterol drugs rather than exercise and change their diet. That makes for a very inefficient system over all thought.

Better to figure out ways to treat the symptoms than the cause if you are PROFIT oriented. Lots more money in selling drugs for stress reduction than there is in teaching a yoga class.

In general I believe in profit motivations. But the idea that capitalism is ALWAYS superior is extreme and verges on delusional, as we've already agreed on the highway system. Like W Churchill said, Democracy is a lousy system but it's all we have.
