"...although person of color seems to have caught on lately."

A person of no color would be invisible. People come in various ethnicities and combinations of Ethnicity. People with a tiny fraction of Black heritage often check the box for African American because of the benefits it brings in public life. American Indians long ago figured out, if they can't be referred to by the term of their own language (which usually just translates to 'the people') then nothing captures the group characteristics of the diverse peoples who inhabited North and South America prior to the modern age, in a dignified way. So they must think it fair that we make dupes of our selves calling them Indians (after the great mistake of Columbus). I've asked and their spokespersons say, 'just call us Indians, please.'

How do you think the millions of Americans who immigrated from Egypt, Algeria, Libya, Morocco, Sudan, Tunisia, Western Sahara, and South Africa feel when we tell them not to check the box that says 'African American'?
