How long do beans and rice last if they're not in vacuum sealed containers? I'm thinking a year or so, am I way off?
I gotta great red beans and rice recipe if anyone wants it. Works best in a cast iron pot (so yer OK if the power is out temporarily/permanently):

(Soak the beans in water overnight first, after sorting and rinsing....also, their recipe sez cook 1 1/2 hour. NFW, it takes all afternoon to do it right. I also add about 1/4 tsp cayenne and a few dashes each of Worcestershire and tabasco sauce. Phenomenal, and can easily be scaled to large batches for a crowd. Best w/Andouille sausage, but smoked ham works well also)
Red Kidney Beans
Camellia's Famous Red Bean Recipe: 1 lb. Camellia Red Kidneys 1/2 lb. ham or seasoning meat 8-10 cups water 1 onion, chopped 1 toe garlic, chopped 2 Tbs. celery, chopped 2 Tbs. parsley, chopped 1 large bay leaf Salt to taste Cooking Directions: Rinse and sort beans. Render meat in skillet. Remove meat and place on side. Saute in fat in skillet, onion, garlic, parsley and celery. Add these with meat, bay leaf, salt and pepper to beans. Boil gently, stirring occasionally for about 4 1/2 hours, or until tender. Add water while cooking if necessary. |
