Very similar problems exist in almost any long term nutritional study, does this mean they are all useless. Apparently there is a competing study with opposite conclusions, I'm sure that one has clean data and is without similar flaws. I think that the over-consumption of saturated animal fats is, more likely than not, a contributing factor to heart disease. We are currently eating more than double the percentage of animal protein recommended by the Paleo diet for ex. Our bodies are all different but in general I don't think it's an as "eat as much as you like" proposition. You may well be right about about sugar, starch and sheer volume, I agree with what you said. I don't think this means that any level of red meat consumption is ok. Not saying you're saying that, but that's the message some folks can take away when they hear that the study is BS, I think holding such a view may be injurious to one's health.
