I think that the over-consumption of saturated animal fats is, more likely than not, a contributing factor to heart disease.

Percentage of saturated fat of total fat consumption dropped significantly over the last 20 to 50 years. Plant based polyunsaturated fats increased, and took its place.

Further, fat calories as a percentage of total calories dropped. Carbohydrate calories increased significantly.

Combining these 2, we have a fairly dramatic drop of saturated fat consumption. If your theory on saturated fats is correct, heart disease should be nearing extinction, right?
