My starter came from my friend in Montana, a legendary mountain man if there ever was one. He got it from a conference in Edmonton where they passed out starters to the participants. They claimed it began in 1898 or something.

I have sourdough bread with cracked wheat in the oven right now.

The recipe I got on the internet says you can make your own starter by mixing up a cup of flour and a cup of warm water, and feeding it for a few days on your kitchen counter. There's enough yeast and bacteria in the air to make a start. When it starts to ferment you have a starter, which you can tell by the foamy top on the mix. I also made a starter with commercial yeast, which is sort of like cheating to purists. I don't use it much, except for hotcakes.

They say you can rehab starters that have turned black by discarding everything that looks spoiled. My friend says if an old bear won't eat it, then it's ruined.
