I am NOT gonna start baking my own bread.
I live alone and it's very difficult to stay on this diet unless you cook. I wish you well on that issue. Here's a bread source you can buy from. ____________________________________
We bought some low carb bread from Julian Bakery, here:

and it is fantastic. They claim only 1gram of carbohydrate, with 12g of protein and 12g of fiber! It seems almost too good to be true! I am a bit concerned, because:
(1) They use some wheat, but it must be a VERY SMALL amount, to get 1 gram of carbohydrate! Maybe its ok! (2) I wonder if its really 1gram of carbohydrate? How reliable are those labels? Anyway to check it?
Next question, how would one go about duplicating this bread at home? I have no idea how to bake. Here are the ingrediants:
Whole grains, bean, seeds of *kamut®, *spelt, *wheat, *rye, *millet, lentils, eggs, soy protein, flax, sesame, *quinoa, *amaranth, wheat gluten, 7 grain flakes, oat bran, sea salt & yeast.
I can imagine with the very low 1g carb, the grain content must be extremely small, just enough to bind it together. I wonder what the main ingrediant is? |
