I don't know that perfection is required. Or that it isn't.

I would say that I've had wheat twice in the last year--once early in the year when I got a craving for a Big Mac and the other a few weeks ago when I was still hungry after my sashimi lunch and ordered the shrimp tempura appetizer. But the fact is that I eat wheat every day because the soy sauce that the restaurant serves is shoyu, which contains both wheat and soy, rather than tamari. I was using it for a long time before I realized that little known fact. I continue to use it. I just use about a teaspoonful, I say to justify it. I have no way of knowing how much wheat is in there. And I have no way of knowing if that amount matters.

I guess, come to think of it, that I should ask them to offer tamari, carry my own, or skip the soy sauce. Hmmmm....

If you just have to have bread, you might try Ezekial bread, available at Trader Joe's.
