The trick with a dutch oven is to have the right number of briquets on the top and bottom, with more on the top. You can actually control the temperature by counting out the briquets you use. The hard part is finding a suitable surface on which to cook. My brother uses a piece of steel I-beam. It has such a great mass that you can put your hand on it while cooking.

There are some aluminum dutch ovens, although I've never seen one. They apparently distribute heat better and are lighter.
