choice is available in lots of professions and some people go one way, some people the other. Seems to me that whether a plumber has his own business or signs on as an employee of Mr. Plumber is mostly a matter of the temperament of the employee and that each is OK for the customer.

Would you rather be treated by a medical professional that loves their work and who gives their heart and sole to it or 501'er?
