agreed, but there is another reason to avoid egg yolks.

that reason is egg yolks contain excessive arachidonic acid. arachidonic acid is the substrate for pro-inflammatory eicosanoids.

my anecdotal experience with eggs and inflammation is as follows:

a friend was scared to death of eggs b/c they would cause severe ulcer flare ups. she was literally scared of the reddi-egg egg substitute i bought for her.

she made scrambled eggs with reddi-egg and a couple egg whites - no problem.

while not proof of anything, it is one data point that fits in well with arachidonic acid in egg yolks causing excess inflammation.

given that aspirin, an anti-inflammatory, is the world's wonder drug, one would do well to try and keep cellular inflammation in check via dietary strategies.

the mediterranean diet is the closest mass anti-inflammatory diet there is and studies have correlated it with an 83% reduction in diabetes, a 20% decrease in cancer and cardiovascular disease and a 40% reduction in Alzheimers and dementia.

high dose fish oil (specifically DHA) has been correlated with a 50% reduction in the incidence of Alzheimer's. the EPA uses up D5D (delta-5-desaturase) so that it isn't available to combine with arachidonic acid and create pro-inflammatory eicosanoids.

dr. sears' latest book is all about arachidonic acid and it is entittled "toxic fat."
