I enjoy a good London Broil and have it frequently. I like the flavor, I like the way it presents on a platter when sliced. This weekend I BBQ'd the perfect London Broil, perfectly caramelized on the outside and on the rare side of medium rare in the middle. After it rested for about 5 minutes I cut off a wee piece and it was truly perfection, almost melted in my mouth...oh so very tender. I couldn't wait to serve it.

Then the cookery gods turned on me. I had sliced more than half of it with the grain before I realized what I was doing. It makes a difference. Huge difference.
