The reason is that you want the meat to grill, not steam. The outside carmelizes better with the marinade wiped off. A good deal of the marinade ends up deep into the meat anyway (by capillary action). Longer marinading times help this. Anyway, that's the rationale (and I've heard this from several grilling experts, including Steven Raichlen and Jaime Purvance, so it makes sense.
