Thanks for the great recipe. I love smoked...well, just about anything. Twelve hours to smoke is definitely too long to do in a BBQ but I just hate to buy another huge appliance that will be used probably only a couple of times a year (storage issues). We're having a fish boat dock here in a couple of weeks...wild Alaskan salmon and live crabs (as well as flash frozen King)...so would love to smoke some salmon for Christmas snacks.

That smoker just seems so big but since it's called the Little Chief, I guess it's the smallest out there. I noticed that the link you provided is for a top loader and saw that there is also a front loader. What, in your opinion, would be better? I think the front loader would be more convenient to use but I suppose you'd lose a lot of the smoke opening the whole door.

Oh. Back to the recipe. Is that white sugar or brown? I guess the non-iodized salt would be sea salt. A lot of grinding to make a 1/4 cup.
