I hear it's a great book, so I'll move it up on my reading list. Thanks for the reminder.

My local grocery sells dried cod in a little wooden box, and I tried some recently. You soak it for hours in cold water, and repeat several times to remove the salt. The result looks like a fresh cod fillet, but the texture is rubbery. It's nice to have our modern frozen foods.
