Chicken stock - that's not something I've ever done, but I boiled some chicken for another dish last night (getting it ready for tday company) and am taking a shot at it. that's 'really' serious soup making, I reckon. :) time I tried it. I did use some leftover chicken last night and did a quick chicken rice soup. also a first and... I learned that I should follow the recipe on the amt of rice, no matter how puny it looks cause it does turn out to be a lot more and sucks up the broth. mine turned out very rice. and a lil mushy - also fix when ready to serve it. it was tasty tho. worth practicing on it.
