There is no doubt that you can get fat on carbs. Sumo wrestlers use a low fat high carb diet to bulk up.

Lets just say that my diet is the same as before but I eliminated the red meat, dairy, and other sources of "bad" fats and replaced them with more fish, more beans, whole grains, more nuts, and hopefully more fruits and vegetables (still have to work on that part).

The carbs (pasta, rice, potatoes, bread) were there before and are still there at least for now (just no added fat to them anymore), but hopefully I have made some improvements and still have a diet that I can live with. Baby steps...

Also went from 2 days exercise per week to 3 or 4. No weight loss yet, but pants are getting looser. So apparently some fat is getting exchanged for some more muscle...
