Chef GZ you get me started on cooking not only will we have to change the name of this thread but probably piss off a large percentage of your fans. Only fresh snapper fillets Baked Veracruz style. Several versions however I am going the heavy tomato route with goat cheese. Only the second time I have prepared the dish so I didn’t invite the neighbors for scrutiny. Very tough crowd with discretionary taste buds. I can copy the recipe and send it to you once I have perfected it. Selection of wine will have to be this remarkable red from Niepoort in Portugal. Bit over the top but I believe it is essential for this particular dish.
