Well, call me a purist, but my opinion is that if good wine can be produced using oak staves, better wine can be produced without using them. There is certainly a place for oak, but if you are going to those lengths to add wood flavor, you are covering up the fruit. If the fruit is good, why would you want to do that? There is nothing I hate more than to get a taste of nice fruit, only to have it followed by a tree landing on my tongue.

FWIW, I feel the same way about the small oak "barriques" that serve the same purpose as the staves, but at a much greater expense.
