we had pork chops as well, but simply grilled with crushed pepper and a sprig of thyme (which went well with the wine)....no soy, no honey....

i would have actually chosen a white wine instead with that combination....tannic wines do not go well with asian type foods (which soy, honey glaze is reminiscent of)

maybe an unoaked pinot grigio (italian) or even a NZ sauvignon blanc....

(pork IS the other white meat<g>)
