You are worried that the wine will be dead, but you are going to open it an hour or more ahead of time and then transport it???

Me, if I was worried about the wine, if anything I would get it to the restaurant a day or two ahead.

My guess is that the wine will be just fine ... although I can't speak to it directly. I certainly have older CA cabs in my cellar that I'm not worried about ... heck, I have older CA Zins which I know to be just fine.

But, it is old enough that I wouldn't consider advance opening. Transport it gently, open it once there, give it a taste, and if it needs air, swirl. Being older, I would be more concerned about it going flat from too much air than I would about it needing the air to open.
