Since the UK spends far less on health care than we do, I'm not sure why that system isn't more feasible

Cost isn't the only metric. By feasibility I had in mind producing a satisfactory product at an affordable price. We Americans are whinier than the Brits and more demanding. We want more and more but want it on the cheap. I don't see Americans being satisfied with not getting everything they want whenever and for as long as they want it. Which would be unaffordable.

You need rationing

You do.

But if everyone wants granny to spend a fortune in the last few months of her life

But politics being what they are, I don't see Americans putting up with enough rationing to keep costs acceptable. That's the key feasibility factor, IMO. For what you want to work you have to change that attitude, which is unlikely, or use force, which is unacceptable. So I want a system that recognizes that reality and works with it rather than pretending it can be overcome.

Re rationing, since it is inevitable, the only question is who makes the decisions. As I'm sure you know, I will always opt for choice and self-determination. In this case, that's both a system viability judgment and a personal preference
