Acorns are heavy in tannins, they are toxic to horses. Tannins aren't very good for you so I've heard that you have to soak acorns in water to leach them out before you can eat them. That's why squirrels bury them and store them for a while so the rain with leach out some of the tannins.

Don't know anyone who eats them but I guess some cultures did in the past. They are very plentiful here in the east, so I can't see them going to waste, Heck here in Maryland some indian ate the first oyster, that was a brave dood. ...oh 'brave' lolol I get it.
