And even more curious how they come up with certain tastes, some of which don't sound very appealing, like "pencil lead" and "leather"

Keep in mind that the sense of smell is by far the most important aspect of tasting anything. For example, most people find the smell of fine leather appealing. That doesn't mean they would want to eat it, but it does mean that tasting things which evoke that aroma can be quite pleasant. Same with pencil lead, though I'll concede that it is less intuitively obvious as a pleasant aroma.

Classic Rioja, though not so much the modern styled ones, is a good place to get a sense of what a taster might be referring to when they mention leather - if you can find one that doesn't break the bank. Bordeaux can be a good place to find wines that might have the both "pencil lead" and leather tastes, though once again price can be a problem.
