I have tried the Brillat-Savarin cheese - a creamy, very rich soft cheese. A little bit goes a long way, but it is delicious! Very rich. I imagine if you made a cheesecake with it, you would go to heaven and never come back! A very delectable cheese, perfect for an elegant hors d'oeuvres.
