Allan I grew up in Bklyn too. The bagels I remember could substitute as hockey pucks after a few hours out of the oven. I think Einstein's bagels are great. I'm afraid there is a tendency to see our past thru rose colored glasses. And then their is the New York thing where everything is better: the bagels, the pizza etc.
