I have heard that adrenalin released in the bloodstream immediately prior to death can cause the meat to be more tender. This is a concern to many human rights activists as many calfs are tortured just before the slaughter to ensure the tenderness of the meat. I wonder if this would work for chickens?

Torture is the preferred method, or maybe we could just scare TLC real bad. Lee, do you have any pictures of the missus handy?
