And we were in the highlands- I've never breathed better air or drunk cleaner tasting water. Gosh I love the highlands. And Mr e is quite the fan of single malts. We toured a lot of distilleries- I don't drink scotch, unless to be polite, but I loved the tours. My favorite memory is learning about the "angles share":

The ageing process results in evaporation, so each year in the cask causes a loss of volume as well as a reduction in alcohol. The 0.5–2.0% lost each year is known as the angel's share.
