There are many different types of fuel cells; those that use stacks simply add more stacks for greater output. Not sure what you saw on 60 Minutes, but if they were showcasing fuel cells for domestic use, they'd be much smaller than these industrial/commercial units.

What was interesting in the linked article was that by providing leased units - and depending on the success of the business model - fuel cell suppliers could evolve into major energy suppliers. Fuel cells supply very clean current, favored by many industries including data centers.

Also, converting excess power from solar, wind etc., into hydrogen is another way to store energy, in some ways preferable to batteries. This is a still-emerging, almost background aspect of distributed energy generation and storage.
