And the fact is the government will still go after you for taxes anyway (at least if you have a lot of income around that time, and esp. if you have large unrealized capital gains).

That isn't the case for most countries, you typically can leave and stop paying income tax, often without even renouncing your citizenship. But the US is more intrusive and grasping in this area than most governments.
