That is so funny, but actually that's exactly how it can be done with many businesses (depends on the type of business) if the owner(s) set out to do things that way.

You can just take blank schedules and plug in the numbers, making sure nothing looks too far out of line for the type of business you have. And avoid a paper trail. If you ever see someone who owns a restaurant shopping for food in a grocery store instead of buying everything through a food services company, you can assume that restaurant owner is trying to minimize his/her paper trail.

Restaurants are potential gold mines, esp. if they serve alcohol.
