chinese civilization is at once quite experienced at being slowly cooked as well as expert enough at slow cooking

as and when called for, the chinese culture is ok with stir frying

both methods bring out the full flavor, just that in the former case, the flavor would be in the sauce which would infuse back into the meat, and in the latter case the flavor would be sealed into what ever stirred and fried.
