You might know that last November traditional Mexican food was found to be an Intangible Cultural Heritage of Humanity by UNESCO.

And not to cause too much Gallic envy, French food, too.

This is an excellent blog on traditional Mexican food. It is written by a lady who 'gets it.' Warning: You might spend a lot of time reading it. Some of the stuff is amazing.
