Yet at every opportunity, when humans gather in any type of community, they organize themselves in a government or quasi-government way.

I said "on the whole" the market does a better job, not that it does a better job of everything, all the time. General keeping of the peace internally, and protection from external threats, is perhaps best done by government at least in most circumstances. Of course the people in charge of providing security tended to put themselves in charge of a lot more.

The external threats issue particularly drives government. Those that would not band together to pool their force against enemies, tended to be conquered by those who did unite their forces. It provides a very important and legitimate need for some government, and often more than just a microscopic government (although there is no need for a government that tries to control most aspects of life) in the context of a world with other governments.

We give up liberty for the greater good.

A small amount of liberty yes. But much of the liberty we give up results in the opposite of the greater good.
