My guess is that they are Atlantic salmon as well. They are easier to raise. The stores like them because they can get them fresh every day and they are all of a perfect size.

Most people don't even kow the difference and even though I don't like the taste as well (too mild), fresh is better than frozen, always.

I can't even eat frozen salmon. They have so much fat they get rancid pretty fast. Bleeding a salmon, which few do, increases storage time from 3 to 8 months. We treat a lot of our fish badly.

When I was in New Zealand the fishermen there not only stack their fish, they kill them instantly with a poke behind the head and then stack them carfully like a cord of wood. They fly them same day to Japan where they are used in ceremonies.

Some people say our king salmon have a wild taste, but I love it? I also have noticed wild prawns from the gulf of mexico have a more idodine taste, but I like that bettter than the mild farm prawns.

Just a matter of taste.

Ps all 5 species of our salmon die in the stream. Atlantic salmon and steelhead return to sea after spawning.
