In forestry school I learned about two different kind of wooden barrels. Slack cooperage holds nails, flower, non-liquid stuff. Tight cooperage is for whiskey, wine, pickles, and so forth.

Slack cooperage can be made out of red oak, which has open pores.



Tight cooperage must be made from white oak, or a related oak such as burr oak. It has little structures called tyloses, which block the pores and keep the whiskey inside. We wouldn't want any to get out until we are ready to drink it!
