I am finally using up the carcass making turkey stock for leek/potato soup. I will probably add some turkey bits to it also.

Leek & Potato Soup

6 cup chicken stock; or turkey stock
6 leeks; chopped, white only
1/2 cup onion; chopped
4 medium potatoes; peeled and diced
1 teaspoon salt
1/4 teaspoon white pepper
1 cup cereal cream
1 bunch chives or parsley; garnish

Combine first 6 ingredients. in large saucepan. Bring to boil. Cover and
simmer for 30 min.

Run through blender.

Return to saucepan. Stir in cream. Heat through.

Garnish with chopped chives or chopped parsley.

Since there are only 2 of us, I reduced the recipe more than half and cooked the first part in a slow cooker. And I added a few chicken bouillon cubes with a chopped celery stalk. I think milk and butter goes better than cream for this recipe, BWDIK?
