I try to avoid potatoes, so I never have made that soup. I hear it is quite delicious.

I finally got the rest of the meat off of the carcass tonight, and it's simmering on the stove right now. I'll freeze it until I need it for some split pea soup I'm going to make with the left over honey baked ham I intend to buy for Christmas supper. Along with the turkey carcass, I added some onion, celery, 1/2 stalk of left over leek and 1 cut up turnip. I also added some pepper, thyme and 1 bay leaf. I'll stick it in the fridge tonight and remove the congealed fat tomorrow before I stick it in the freezer. I always make stock out of left over TG turkey. It would be a shameful waste to throw it all out before making stock.
