Saw a show on cooking great french fries. Yukon Gold cut into 1/4 by 1/4 strips. Peanut oil in the pot. Now here's the kicker, you don't dry the potatoes AND YOU PUT THEM INTO THE ROOM TEMPERATURE OIL. You bring the oil to a boil for 15 minutes and don't touch the spuds. Then you stir them and cook for another 5-7.

Warning science next. Dry potatoes absorb oil. Drying them and tossing them in hot oil causes them to absorb oil. If they go in cool and wet they can't absorb the oil and the water turns to steam and makes them fluffy inside. .
