If people are not paid enough for what they do, they will quit and go to work somewhere else. Whether it's emails after hours, or sweat in working hours, or danger anytime, the employee makes a decision whether their employer is worth working for. If the employer's expectations don't match the employee's willingness, then they don't have an agreement.

It seems extremely simple to me and is how my employment has always gone. If I didn't like it, I quit.

As a result of that, I was always happy where I was working. If things stopped being good, good bye. Which is not to say that the jobs I had were all good jobs. Some were the worst jobs because not many people would do them, so the money was good and it didn't seem difficult to me to do them, though grinding concrete wasn't something I would have done for long.
