When I get down to Oregon, I would like to teach a course on epistimology. I feel the real challenge is getting kids both interested and confident in their ability. The nice thing about sprinkling some quantum physics in discussions is that it is an area where real magic exists that no one understands except that it is real e.g. the duality of particles, entanglement/ spooky action at a distance and the Heisenberg Uncertaintly principle.
