Way OT. I think we've covered lard, or at least made a dent in it. (If there is any food you can "dent" it would be lard) Time to move on to marrow. Osso buco is my favorite way but just plain marrow bones simmered in broth is nothing to sneeze at either. Nice little french bread slices, crisped with a dollop of marrow........yummm! Your turn.
