Projected and/or holographic keyboards would work in much the same way. A laser scans the keyboard area and detects your finger positions. From a hardware standpoint, not tremendously challenging. The software would be more challenging, since the system would have to recognize a key press motion, and differentiate between that and other types of movements your fingers naturally make when typing.
